The ministerial circular with the new guidelines<\/strong><\/a> on raw milk productions has raised considerable concerns not only among producers but also among professionals in the sector.<\/p>\n\n

AIDA, has prepared an open letter to the Ministry that is open for other associations to sign.<\/strong><\/p>\n\n

SUBJECT: Open letter regarding raw milk cheese production.<\/strong><\/p>\n\n

The Italian Agroecology Association (AIDA), with the support of the signatory associations of the<\/p>\n\n

this letter, intends to make a thoughtful contribution with respect to the situation that is being created<\/p>\n\n

around the issue of raw milk cheese production, from the perspective that the<\/p>\n\n

distinguishes, geared toward looking in an integrated way at the health of people, animals, and<\/p>\n\n

Of ecosystems. The measures by which the Ministry of Health intends to manage the risk from Escherichia <\/p>\n\n

STEC coli and the media hype developed around the issue will indeed have multiple<\/p>\n\n

repercussions on this mode of production. A technology of which the following highlights the <\/p>\n\n

benefits to human health and the balance of production systems and the environmental contexts in which they<\/p>\n\n

are placed, as well as their relevance to the socio-economic fabric of so many Italian territories.<\/p>\n\n
