First edition of the Fermentation Festival

There is wonderful news brewing in the pots within the WWOOF Italy network. On Sunday, June 14, 2026, Bucolica Circolo Culturale Agricolo, our WWOOF host in Lastra a Signa (FI), will host the first edition of the Bucolic Fermentation Festival.

A day immersed in nature dedicated to those who produce, those who love or simply want to discover the ancient and revolutionary art of food fermentation.

Who are the hosts?

Founded in 2019 by brothers Filippo and Riccardo Zammarchi on the land where they grew up, the Bucolica Farm is a 5-hectare organic farm. Conceived as a true integrated and multifunctional ecosystem, vegetables, ancient grains, fruits, olive trees and bees are grown there. A place where agroecology is combined with educational and social activities, embodying the WWOOF spirit.

The event grew out of the very meeting of Bucolica’s vision and Ferment’action, a cultural movement committed to spreading fermentation as a collective practice by making us reflect on our relationship with food and the environment.

What you can expect at the Festival (10:00 a.m. to 9:00 p.m.)

The program is very rich and ranges from artisanal flavors to relaxation in the midst of nature:

  • The Fermented Market: Until 7 p.m., a meeting space with more than 20 artisanal producers from all over Italy. You can discover and taste such wonders as kimchi, miso, kombucha, cider, vegetable cheeses, water kefir, mead and sourdough bread.
  • Hands-on Workshops: To learn how to ferment with your own hands.
    • 10:30 a.m. – 12:00 p.m. | Fermented vegetables (by What a ferment!)
    • 12:30 – 2:00 p.m. | Miso (by Fermenta.To)
    • 2:30 – 4:00 p.m. | Kimchi (curated by Giulia Pieri)
    • 16:30 – 18:00 | Kombucha (by Acid Lab)
  • Guided Tastings:
    • 11:00 a.m. – 12:00 p.m. | Tempeh (by Mugello Tempeh)
    • 12:30 – 1:30 p.m. | Non-alcoholic Fermentations (by Symbiotic Drinks)
    • 15:00 – 16:00 | Sidri (by APAS)
    • 4:30 p.m. – 5:30 p.m. | Vegan cheeses (curated by Adele forme vegetali)
  • Books, Meetings and Wellness: Throughout the day there will be a selection of themed readings by the Malaparte Bookstore. There will be Morning Yoga sessions (and Yoga Bimbi in the afternoon) with Alida, a talk on the “new way of drinking” with Daniele Pignone of Fervere, and the opportunity to take a guided tour of the farm to learn about the SMAC (Soil, Microdiversity, Agroecology and Community) agroecological project.
  • Food court: will be active all day with kombucha, natural wines and agricultural spritzes. At lunch (12:00-3:00 pm) and dinner (7:00-9:00 pm) you can enjoy fresh pasta from ancient grains produced directly at Bucolica in a special edition curated by Laboratorio Doppiozero and Fresco. All accompanied by the evening musical carpet by Materia Vibrante.

Useful Info and Reservations

Admission to the festival is totally free. However, in order to ensure the best possible experience, registration for workshops and tastings is mandatory as places are limited.

  • Getting there & Parking: The farm is located about 10 km from Florence and is easily reached either by train (800m walk from Lastra a Signa station) or by car (800m from the FI-PI-LI Lastra a Signa exit). Recommended parking is near the municipal swimming pool in Via Fermi (only 50m walk from the entrance).
